Description

The following recipe for tomato soup made from fresh tomatoes is really easy and consists of a minimum of ingredients. Even so, the resulting taste of the soup is rich, the structure is perfectly creamy and the preparation is incredibly easy.

  1. Peel the fresh tomatoes and cut them into larger pieces. Cut the onion into similar sized pieces as well.
  2. Place 4 tablespoons of butter in a saucepan and let it melt over medium heat. Add onions, tomatoes, a pinch of salt and cover with hot water from the kettle or vegetable broth.
  3. Cook, stirring occasionally, for 40 minutes.
  4. After cooking, taste and add salt if necessary.
  5. Using a food processor, blend the soup until smooth. If the resulting consistency seems too thick, you can soften it with the help of cooking cream. Avoid using water, as it would negatively affect the taste of the soup.
  6. Serve alone, with toast, croutons or fresh pastries.
