How to prepare spinach

  • Steaming spinach – gentle heat treatment of spinach for filling savoury pies, rolls and spinach lasagne. Steamed spinach can also be added to cottage cheese spread, mashed potatoes or legume salad.
  • Blanching of spinach – short boiling of spinach in hot salted water followed by rapid cooling. Spinach thus retains a substantial part of its vitamins. Blanched spinach can be frozen or used in a similar way to steamed spinach.
  • Sautéing spinach in fat – quick heat treatment of spinach for use in pasta, lasagna, egg omelette, quiche or savoury pancakes.
  • Cooking spinach stew – usually cooked in sautéed onions seasoned with salt and garlic. Spinach cooked in this way is an ideal side dish for meats and dumplings.

Healthy spinach soup has a delicious taste, is very quick, easy to prepare and suitable for children.



  1. Peel and finely chop the shallots. Then lightly fry them in butter and let them brown.
  2. Dust the fried onions with flour and stir to form a light roux.
  3. Pour the vegetable stock over the meal and press two cloves of garlic into the mixture.
  4. Cut the spinach leaves into small pieces and put them in the pot.
  5. Season the soup with salt and pepper, add the cream and simmer for about five minutes.
  6. Blend the finished soup with a stick blender to achieve a smooth consistency.
  7. Spinach soup can be served with golden fried or toasted croutons.


How to improve spinach soup

  • Blanching (boiling the spinach in hot salted water and then cooling it rapidly) ensures that the spinach retains much of its nutrients and its bright green colour.
  • You can prepare spinach soup with egg and serve with boiled or poached egg.
  • You can also top the spinach soup with buttered or baked croutons. If you like cheese, improve the croutons by grating the hard cheese over them.
  • If you don't have fresh spinach or baby spinach, you can make a soup from frozen spinach or spinach purée, but be aware of the difference in taste - spinach soup from fresh spinach is definitely not equal to frozen spinach purée.
