Most pumpkin soups are creamy. However, if you avoid cream or any dairy products, perhaps because you're watching your weight, you'll appreciate this basic preparation for soups without cream.



  1. Wash the pumpkin thoroughly and cut it in half. You don't need to peel the pumpkin, but you need to scoop out the seeds. Then cut it into smaller cubes. It's quite hard in its raw state, so be careful.
  2. In the meantime, fry the onion in oil, add the chopped pumpkin and garlic.
  3. Cover everything with water so that the pumpkin is submerged and simmer on low heat until softened – about half an hour. Don't forget to season the soup with salt, pepper, and a pinch of turmeric.
  4. After the pumpkin has softened, add a piece of butter and blend the soup with a hand blender. If it's too thick, you can add a little water.


Tip: Instead of turmeric, the soup also goes well with warming and exotic curry spices or ginger. Finely grated ginger gives the soup a spicy taste and makes it a vitamin bomb.
