What is Parfait?
The term “parfait” (pronounced “par-fay”) essentially refers to a chilled or frozen cream, with cream being its primary ingredient. It’s somewhat of a sorbet, which is mostly prepared sweet, but savory parfaits are not uncommon.
After a delightful lunch, indulge in a delicious vanilla parfait dessert. This dessert has its roots in France and has been prepared since 1894. Although the name sounds grand and complex, making parfait is not at all complicated. On the contrary, its simplicity will surprise you.
Types of Parfait
As mentioned earlier, you can prepare both sweet and savory versions of parfait. The savory version often includes goose liver, but you can also find parfaits made from fish, potatoes, or cheese.
Regarding the sweet version, the sky’s the limit. You can add almost anything, from fruits, chocolate, to nuts or granola.
How is Parfait Served?
Just like its name, serving parfait has its charm. You can serve parfait in a glass or a glass jar (some prefer bulbous wine glasses, while others opt for sealable glass jars). For its preparation, molds like the saddle of venison and similar molds are also used.

Sweet Parfait recipe – A Popular Dessert from France
Vanilla parfait is the ideal dessert for hot summer days, refreshing and surprising with its delicate taste and consistency. The recipe is swift and simple, and you can serve it with fruit sauce, chocolate, or nuts.
Whisk the eggs with sugar until frothy - make sure to whisk for at least 8 minutes.
Pour the milk into a pot, add the seeds from the vanilla pod, and bring to a boil.
Once the milk starts boiling, add it to the egg yolk foam, mix, and cook for another minute.
Then whisk the entire mixture with an electric mixer - this helps it cool faster.
Once the mixture is completely cold, place it in the refrigerator for an hour.
Meanwhile, prepare a mold, ideally a saddle of venison, and place it in the refrigerator as well.
In a bowl, whip the cream - the cream needs to be chilled to whip beautifully.
Combine the mixture from the refrigerator with the whipped cream, using a spatula, gently and carefully combine everything.
Pour the mixture into the mold and let it set in the refrigerator for at least 3 hours.
