  1. Clean the apple and grate it on the coarse side of the grater.
  2. Put all the dry ingredients in a bowl and mix. Add the egg, oil, milk, and grated apple. Mix thoroughly.
  3. Whisk two egg whites into stiff peaks and gently mix them into the dough, being careful not to deflate the egg whites.
  4. Finally, add nuts, cranberries, dark chocolate, or whatever you want in the cookies.
  5. On a baking tray lined with baking paper, place smaller balls, which you lightly flatten with your hand or spoon.
  6. Bake for 20 – 30 minutes, depending on the size, in an oven preheated to 180 ºC.
