The advantage of this vegetable is availability, as it is a domestic food that can be grown in the garden. Frozen brussels sprouts are also available, which is immediately on hand. Just reach into the freezer and cook.

Kale soup is an ideal meal for dry autumn days when you need to warm up with a warm dish.



  1. Let's prepare the vegetables. Peel, rinse and coarsely grate carrots, celery and potatoes, or cut into cubes.
  2. Peel and finely chop the onion and let it vitrify in vegetable fat (rapeseed or sunflower oil).
  3. Place the grated vegetables on top of the fried onion and fry.
  4. Sprinkle a spoonful of flour over the vegetables, fry and cover with stock or water. Bring to the boil.
  5. Season the soup with salt, pepper, ground cumin and boil thoroughly.
  6. When the soup is cooked and the vegetables are soft, blend.
  7. Finally, add finely chopped green parsley to the soup and bring to the boil.


  • The soup can also be topped with bone or smoked meat broth.
  • Chopped chives can be used instead of green parsley.
  • If you don't have fresh kale on hand, you can also use frozen. Its advantage lies in the fact that it is already chopped and ready to use.
