History of Quiche
Quiche Lorraine, how it is originally named, comes from French Lorraine. The delicious dish, has its origins there, according to the legend. But maybe its origins will be a bit more difficult, because during 14th century similar savoury cakes were prepared by English. They added meat and fish to the quiche, but you won´t find these in French delicacy. Even more interesting is the possibility that concept was influenced by German domination of Lorraine. The name of the cake also suggests this – its name probably cames from German word „kuchen“.
The English version of the cake is even recoded in historical sources – supposedly already in 1399, when Henry IV. was crowned, some kind of sweet cake was served on this occasion. Unlike the French version, this cake contained of honey and saffron. So, French quiche has most likely nothing in common with the English cake.

Original Quiche recipe
Although today we probably this of this delicacy as delicious and crunchy dough, the original quiche was made of bread dough. It was gradually evolved into today´s very crunchy and soft crust, very typical for this delicacy. Dough for quiche is nowadays more delicious than its original bread version.
Over the time quiche spread all around the world. And so have its forms – while originally was Quiche Lorraine made from whipping cream, eggs and bacon, nowadays the cheese is usually used in the recipe. Until today is quiche made from bread dough in Baden, near Bodamsee on the border between Germany, Austria and Switzerland.
Modification of Quiche
Are you looking for the right way to prepare quiche? Traditional method is very difficult to hard, because as this famous dish flew around the world, everybody has adapted in into their culture and taste preferences. After the Second World War, savoury quiche spread literally to every corner of the world. It was most famous in America, where Americans liked to prepare this dish during hippie era. Original Quiche Lorraine has thus seen many variations. You can enjoy it such as:

Every culture added something to quiche, but original remains only one – French Quiche.
In America is quiche that popular, that every year on 20 of May several catering companies compete to see, who will make better quiche on this occasion. It can be eaten warm or cold. Savoury quiche celebrates its own feast day here.
Meanwhile we discuss its traditional preparation, many will think that its name is very similar to the concept we know from South America. Quiche with spinach, onion or other ingredients has nothing common with the indigenous people from central and northern Guatemala. Their tribe is called Quiche. The resemblance is purely coincidental.
Quiche in all ways
As we have already mentioned, quiche is original, but you can vary it up to your own taste preferences. You can prepare lactose-free quiche very easily, we also advise you to use silicon baking tin. For example, a tomato quiche with onion and cheese is great for harvesting. It is not a problem to create an original asparagus quiche, on which you will grate parmesan. Many people also like the variation, where fish meat is used – for example salmon quiche.

French quiche: Recipe for savoury cake
Enough talking, let´s move on to practise. We are going to prepare recipe of classic Quiche Lorraine. The preparation is not difficult and you will love the taste of quiche!
If you don´t want to prepare your own dough, you can also try puff pastry version of quiche. It is especially useful when you only start with making quiche and you are worried that you can´t make your own dough. Classic quiche can be then varied with seasonal vegetables, so you can prepare quiche with pumpkin, zucchini or leek.
First, process the butter, plain flour and a pinch of salt. Then add 7 tablespoons of cold water and knit smooth dough.
Let the dough chill in the refrigerator for at least quarter of an hour.
Prepare baking tin and grease it with butter and dust with semi-coarse flour.
Preheat the oven to 200 °C.
Rolled out the cooled dough into the shape of baking tin.
Fry the bacon in a frying pan.
Fry the onion on the butter until gold.
Prick the bottom of the dough with a fork and place a baking paper on it. Burden the baking paper with beans. Bake for 20 minutes. Then remove the paper with beans and bake it for another 5 minutes.
In a bowl, whisk together eggs, whipping cream, onion and half of the cheese. Add salt and black pepper. Fill quiche with this mixture. Sprinkle the filling with the rest of the cheese.
Bake in the oven at 180 degrees Celsia for about 25 minutes.
Let the cake cool in the baking tin and then slice it and serve on plates.
How to serve Quiche
It is not good to overbake a soft quiche. Really stick to the time it should be in the oven and then take it out uncompromisingly. Quiche is typical for its softness, especially in the middle, when it tends to be elastic. Overdried quiche also loses flavour.
Do not rush with slicing the quiche. It is suitable to wait at least a quarter of an hour before you start cutting it. Waiting a little longer will help quiche to hold together, not only the cream, but also the body cake.
