Mushroom soup can be prepared in many ways, the best mushroom soup is made with fresh mushrooms and the best is to use porcini mushrooms. But you can certainly try to prepare mushroom soup from champignons, chanterelles or oyster mushrooms.
To make this soup creamy, the basis is a larger amount of mushrooms. The soup is blended after cooking, which creates a creamy consistency. You can also add cream to soften it, but mushroom soup without cream is also good.
Mushroom soup shouldn’t be frozen, in general, mushrooms should be consumed as soon as possible and shouldn’t be reheated more than once. Even re-freezing the soup isn’t entirely correct, as the mushrooms are susceptible and there is a risk of poisoning.

You certainly know the classic mushroom soup with potatoes, but have you ever tried to prepare a creamy mushroom soup without cream? Or do you prefer it with cream? At first, clean, wash and cut the mushrooms into smaller pieces. If we are going to prepare mushroom soup from dried mushrooms, we will soak the mushrooms in a bowl of water beforehand.
Prepare a larger pot and heat a piece of butter or lard in it. Add the chopped mushrooms and simmer them for about 15 minutes until the water evaporates.

Peel the onion and garlic, finely chop the onion and press the garlic. Add the prepared onion, garlic and sprig of thyme to the mushrooms and stir well.
Then pour in the broth and bring the soup to a boil.

After the soup is finished cooking, set aside and blend with a hand blender so that smaller pieces remain in the soup. Season the soup with salt, pepper and a pinch of cumin and serve.
When serving, add a teaspoon of sour cream to the soup on the plate.
