  1. Preheat the oven to 200°C and prepare a greased tray.
  2. Cut each chicken breast horizontally in half. Beat the slices to a thickness of about 7 millimeters.
  3. Place a large piece of plastic wrap on a board. Then lay out the slices of prosciutto to form a rectangle (about 25x35 cm in size). The ham slices should slightly overlap.
  4. Then spread the slices of chicken meat on top, similar to the ham. Each piece should slightly overlap.
  5. Beat the meat slightly so that the slices connect well.
  6. In a large bowl, combine ricotta, parmesan, lemon zest, chopped dried tomatoes, chopped sage, and beaten egg.
  7. Season the mixture with salt and pepper to taste and mix well.
  8. Place the filling along the longer side of the chicken slices using a spoon.
  9. With the help of plastic wrap, roll the roulade – start where you placed the filling.
  10. Remove the foil and discard. Place the roulade seam side down on the prepared tray.
