That´s why we usually use fruit that soaks beautifully into the birthday cake body, thus fulfilling both requirements. Except the fruit we can also use lemon. I use this instruction for birthday cake with fruit the most often. Cake body always comes out very fluffy. However, it is very classic and one-size-fits-all instruction, so you have a place to experiment. Whether you decide to change nuts for almonds, add cacao or your favourite chocolate. It is up to you and you will definitely make everybody smile and happy, especially when you prepare it as kid´s birthday cake.

Prepare cake body

  1. We start with cake body. The amount that is written in ingredients is for 1 cake body, which we will cut into 2 parts after baking. However, we will bake 2 cake bodies (in total we will have 4), so we will birthday cake very nice and tall.

  2. Separate the egg whites from the yolks and whip the egg whites into sniff snow.
  3. Add the powdered sugar into egg yolks and mix until foamy.
  4. Add 8 tablespoons of hot water into the egg yolks foam and mix again.
  5. Add the dry ingredients, so semi-course flour, ground nuts and half of the baking powder.
  6. At the end just add zest and juice for half a lemon and stir the snow.
  7. Pour the body cake into greased and floured 16 cm baking tin and bake 40 minutes at 120 °C.
  8. Bake the body cake one more time and let´s start the cream preparation.

Prepare cream and raspberry filling

  1. Whip the whipping cream until stiff, add soft curd, gelatin stiffener and lemon juice. Whisk the cream to combine all the flavours and let it chill.
  2. Important part of this cake is its raspberry filling. Add 250 g of raspberries to small saucepan, add one tablespoon of sugar and cook for a while.

Instructions for completing the birthday cake

  1. When we have prepared both body cakes (and both cut into two parts), cream as well as raspberry filling, we can start assembling the cake.

  2. Spread a little cream on the base (so the cake won´t move) and place first body cake on it. Place cream on it, raspberry filling and at the end the whole pieces of raspberries, so the cake will have real raspberries flavour.
  3. Place the next body cake, spread the cream and raspberries. Continue like this until you place the last cake body and you can start wiping.

  4. Spoon the cream into a pastry bag and spread evenly on the cake. Use a cake spatula to smooth the cream.
  5. Spread cream on the sides and top of the cake, set it aside in the refrigerator, so the cream will set on the cake, body cake will soak up the raspberry water and all flavours will combine. I usually let the cake in the refrigerator overnight.
  6. This light and stiffened birthday cake is ready for the final touches and decoration.
  7. Prepare chocolate icing. As always heat the whipping cream, to which we add pieces of chocolate and butter. Stir until everything is melted. The cooled icing can be spread on the cake. I pour the cake by taking a bit of icing on the tablespoon, put it over the top of the cake and carefully letting it run down the sides.

  8. When we have the cake polished, we can start decorating. And here is the part, where you are free to do anything you want. For decorating we can use everything, such as fruits, flowers, candy. It depends whether you are making a cake for your mother or for someone else. I baked the cake for 12-years old cousin – so I used flowers to decorate because I knew, she would be most pleased with a birthday cake with flowers.
