Asparagus Soup: Recipe made from Green Asparagus

Asparagus soup made from green asparagus is widely prepared in our country, precisely because green asparagus is the most available. Its taste is bitter, but it goes well with dishes. On the contrary, asparagus soup made from white asparagus is the mildest, white asparagus has a very mild taste, while purple asparagus is only slightly bitter and relatively rare.

The use of asparagus in the kitchen

Asparagus has many uses in the kitchen, it is suitable not only for soups. Short-boiled asparagus together with butter is suitable as a base for preparing sauces, raw asparagus can then be added to vegetable salads. It is suitable for preparing vegetarian dishes but also as a side dish to meat. Baked asparagus with pasta is also excellent, and you can also add asparagus to Italian risotto.

We usually cook asparagus for just a few minutes, it always depends on how thick the sprouts are. White asparagus is cooked a little longer, about 5-8 minutes, green asparagus usually takes even less, about 2-5 minutes. Before serving, however, it is necessary to check whether the asparagus has really softened. In soups that are mixed, the asparagus must be really soft, otherwise it is enough if the asparagus is cooked until semi-soft.

  1. Peel and finely chop the onion. Let's heat the olive oil together with a piece of butter in a pot. Add the chopped onion and fry briefly.
  2. The ends that are woody need to be removed from the asparagus. But we don't have to throw them away yet. Cut the asparagus into pieces.
  3. Add the vegetable stock to the fried onions and add the chopped asparagus.
  4. Cover and cook the soup for fifteen minutes.
  5. After fifteen minutes, check whether the asparagus has softened enough. If not, let the soup cook for a while longer until the asparagus softens.
  6. Season the soup with salt and pepper.
  7. After cooking, blend the soup with a stick blender and we're done.

Note

  • Even before we blend the soup, you can add a pinch of nutmeg to it. Asparagus soup will then have a more interesting taste.
  • Finally, it is possible to roast the tops of the asparagus, which we originally cut off, and decorate the soup with them when serving.
