Why is asparagus soup healthy?

The use of asparagus in the kitchen
Asparagus has many uses in the kitchen, it is suitable not only for soups. Short-boiled asparagus together with butter is suitable as a base for preparing sauces, raw asparagus can then be added to vegetable salads. It is suitable for preparing vegetarian dishes but also as a side dish to meat. Baked asparagus with pasta is also excellent, and you can also add asparagus to Italian risotto.
We usually cook asparagus for just a few minutes, it always depends on how thick the sprouts are. White asparagus is cooked a little longer, about 5-8 minutes, green asparagus usually takes even less, about 2-5 minutes. Before serving, however, it is necessary to check whether the asparagus has really softened. In soups that are mixed, the asparagus must be really soft, otherwise it is enough if the asparagus is cooked until semi-soft.
Asparagus soup, like other soup recipes, can be prepared in several ways. It can be prepared with or without cream, in a creamy or classic version.
Asparagus Soup: Recipe made from Green Asparagus
Asparagus soup is prepared very quickly and is very healthy and tasty. Even children will love it. Peel and finely chop the onion. Let's heat the olive oil together with a piece of butter in a pot. Add the chopped onion and fry briefly.
The ends that are woody need to be removed from the asparagus. But we don't have to throw them away yet. Cut the asparagus into pieces.
Add the vegetable stock to the fried onions and add the chopped asparagus.
Cover and cook the soup for fifteen minutes.
After fifteen minutes, check whether the asparagus has softened enough. If not, let the soup cook for a while longer until the asparagus softens.
Season the soup with salt and pepper.
After cooking, blend the soup with a stick blender and we're done.
